During his impressive career, Chef Mike Smith has refined his creative flare for food at
several of Dallas’ most noteworthy restaurants. His exposure to a variety of international cuisines
coupled with his Southern roots provide him with an expansive culinary repertoire that has earned
him the respect and praise of critics, including multiple coveted four-star rating by the Dallas Morning News.
Mike’s achievement is the result of years of dedication, passion and innovation.
Mike sprang onto the Dallas culinary scene as Sous-Chef of The Green Room, and later went on to become
Chef de Cuisine at Arcodoro/Pomodoro.
He was partner and Executive Chef at Thomas Avenue Beverage Company
until 2009 when he began a project with Abbot Diabetes Care to develop fresh, portioned,
healthy food based on the glycemic index. He served as Executive Chef at The Common Table,
which has received national recognition as one of the best gastro pubs in the country. Today,
Chef Mike is the genius behind the masterful menu at Utopia Food & Fitness that keep clients on
track and happy throughout their fitness journey.
Mike currently resides in Dallas with his wife Catherine and their son Max.
President, Chief Fitness Officer, and Founder
For Utopia Food & Fitness President, Chief Fitness Officer and Founder Kirk Wilder,
fitness & health has been a life-long pursuit. His work began in high school when
he first developed a fascination with the human body, its capabilities and the effects of
exercise and nutrition. After pouring over textbooks and research, he put his own body through
programs that allowed him to achieve greater muscle mass and help friends and classmates do the same.
After enrolling at Del Mar Junior College in Corpus Christi, Kirk decided to enlist in the
U.S. Navy where he trained pilots to help them achieve peak physical condition. He eventually returned to college,
majoring in accounting, and graduated second in his class. Following a stint at Arthur Andersen and after
serving as president of a successful real estate company, Kirk took a leap of faith and began investing
in his own health clubs. His revolutionary diets followed and so did satisfied clients.
Kirk personally founded and owned five North Texas fitness clubs and has developed and owned numerous
diet-and-exercise programs that focus on customized solutions, including Diet Free, The Nautilus Diet,
and Calibrations. His most successful creation, Biometrics One-On-One, received scientific verification
from UT Southwestern Medical, and the results were published by the American Medical Association in 1990.
The program was licensed to clubs in 32 U.S. states and boasts more than 10,000 nationwide participants.
It has been followed by Dallas Cowboys coaches and is still successful and sought after today.
Kirk has made an incredibly successful career identifying the perfect combination of good food and
effective fitness. The Utopia Food & Fitness six-week program is the culmination of 32 years of hard work
and dedication to helping people be happy, healthy and fit.
Dr. Carol Ireton-Jones
Chief Nutrition Officer, Registered Dietitian Nutritionist, and Founder
(PhD, RDN, LD, FACN)
As Chief Nutrition Officer, a Registered Dietician Nutritionist and Founder,
Dr. Carol Ireton-Jones serves as the lead nutritional counselor for Utopia Food & Fitness.
She brings more than 33 years of experience across an extensive range of nutritional topics
and ensures that every Utopia meal is healthful, balanced and nutritious. Carol has been a
private nutrition and diet consultant since 1982. She has served as principal,
executive vice-president of Professional Nutrition Therapists, LLC since 1996,
and her work has been recognized time and time again by her peers.
she received the American Dietetic Association Medallion Award, the highest award for a
Registered Dietitian. In 2010, Carol was recognized as a Texas Distinguished Dietitian.
She has been named a Texas Distinguished Scientist by the Texas Dietetic Association.
As an industry expert, Carol has been published many times over, including authoring three books,
18 book chapters, 55 peer-reviewed publications and more.
CEO, CIO and Founder
Chief Executive Office, Chief Information Officer and Founder Scott Wilder brings six years
of strategy consulting experience with the Boston Consulting Group and a Wharton MBA to Utopia Food & Fitness.
He grew up in and around the weight-loss industry, working with and watching his father,
Kirk, experiment with different combinations of nutrition and exercise.
Scott graduated from the University of Texas at Austin with a degree in computer science
and became a professional web developer and database administrator. He spent several years
working with start-ups prior to attending graduate school at the Wharton School of Business
at the University of Pennsylvania. Scott received his MBA in 2006 as a Palmer Scholar graduating
among the top 5 percent of his class.
Growing up in Montana, Barb Bowman embraced an active lifestyle from an early age. She later channeled
her childhood passions into a career in fitness that has spanned more than 25 years.
Barb graduated from Montana State University where she was also a collegiate athlete lettering in swimming.
She earned her BA in Business Communications with a minor in Exercise Management.
Over her health and fitness career, Barb has worked with all types of participants including seniors,
children and special populations. Most recently Barbara managed the Group Fit Crossfit in Plano Texas.
Barb has her personal training certification from Cooper Clinic, and also holds certifications in AFAA
Group Fitness, YogaFit, Aqua Therapy, mindful meditation, and TRX.
Barbara first discovered Utopia Food & Fitness as a member in 2013. She was curious how only
twice-a-week circuit training could produce such high-level results, so decided to go through
the program herself. She was both astonished and delighted that Utopia’s very safe, controlled,
time efficient program gave her even greater results than she had accomplished in the past with
more demanding, time consuming, and injury risk regimens. Plus the food tasted great!
One year later Barb was compelled to join the Utopia team.
